Chop the tomatoes into bite-sized pieces and add to a large salad bowl. Tear or chop the basil leaves and add those to the bowl along with the mozzarella. Add cooled breadcrumbs to the bowl.
In a small bowl whisk together the olive oil, vinegar, garlic, oregano, and salt and pepper. Pour the vinaigrette over the salad in the large bowl and toss to coat. Let it sit for a few minutes so the bread can absorb the liquid, roughly 15–20 minutes.
Serves 4 hungry guests.
Shortcuts!
You can buy croutons premade or skip the oven step by using more stale or crustier bread—3-day-old baguettes are perfect! If you're in a hurry, you can also buy a balsamic vinaigrette dressing premade. Newman's Own Lite Balsamic Dressing is a very good quick substitute.

Champagne Mule
6 mint leaves
2 ounces lime juice
2 ounces vodka
4 ounces ginger ale
4 ounces champagne
lime wedges
Muddle together the mint leaves and lime juice. Mix in the vodka then strain evenly amounts into two champagne glasses. Add into each glass 2 ounces of ginger ale and roughly 2 ounces of champagne to top off the glass. Garnish each with a mint leaf and lime wedge.
