Directions:
Preheat oven to 400 degrees. Line 12 muffin cups with paper liners or spray with nonstick cooking spray. In a medium size bowl, cream together cream cheese, pineapple, and 1 tbsp. sugar until well combined.
Using an electric mixer, cream the butter and remaining 1 cup sugar in a large bowl. Add the eggs and milk and beat until thoroughly combined. Add flour, nuts, and baking powder and continue to beat until blended. (It will be stiff.)
Spoon 1 heaping tablespoon of batter into each of the prepared muffin cups. Top with 1 tablespoon of cream cheese filling and then spoon 1 tablespoon of batter over the filling. Bake for 15 minutes. Reduce oven temperature to 350 degrees and bake for 10 more minutes or until a skewer inserted into the center comes out clean. Serve and enjoy!
AL’S FAVORITE PIZZA
Ingredients:
1 pizza crust (I like Boboli.)
4 tbsp. olive oil
2/3 cup mozzarella cheese, shredded
1/3 cup blue cheese salad dressing (I like Bob’s Big Boy.)
½ lb. pork sausage
½ cup fresh mushrooms, sliced
½ cup chopped fresh onion
2 garlic cloves, peeled and diced
2 green onions, chopped
2 tbsp. basil leaves, chopped
OPTIONAL: Pizza stone and pizza peel
Instructions:
Preheat oven to 425 degrees. If you have a pizza stone, put it in the oven.
Heat 1 tbsp. olive oil in a frying pan over medium heat. Add onion and mushrooms. Cook until limp. Add garlic and cook for 1 minute. Remove from heat. Put onion mixture in small bowl.
Heat 1 tbsp. olive oil over medium heat. Fry the sausage until brown, breaking it up by stirring it from time to time so it becomes bite size. Remove from heat.
Place crust on pizza peel or cutting board. Spread 2 tbsp. olive oil on crust and then spread blue cheese dressing on top. Sprinkle with parmesan cheese. Evenly distribute onion mixture over the crust. Scatter sausage over crust.
Transfer pizza crust to stone or put into oven on oven rack. Cook for 12 – 15 minutes. Remove from oven and sprinkle basil and green onion over it. Let sit for 3 minutes. Slice and serve. Enjoy!
